Boil the potatoes in plenty of water, with their skins on, until a fork can pierce them.
Once the boiled potatoes have cooled until warm, peel and dice them.
Whisk the yogurt, mustard, olive oil, lemon juice, and salt in a bowl until smooth.
Toss the potatoes with the scallions and dill, add the dressing, and mix well. Chill before serving. Note: Because the dressing contains yogurt, do not leave the salad at room temperature for a long time.
Important: Boil the potatoes with their skins on, then peel them. Peeled potatoes absorb too much water and can make the salad watery. Contains dairy (yogurt). The dressing soaks in better when mixed with the potatoes while they are warm, but let them cool completely before serving. Allergens: contains milk and dairy products, and mustard.
