This hearty Argentine home-style cazuela cooks chicken thighs, rice, and cumin together in a pressure cooker. Getting the pressure-cooking time right helps the chicken and rice finish at the same time.
Leave the pressure cooker uncovered and sauté the onion and red pepper in olive oil until softened. Add the chicken thighs and cook for 10 minutes, until lightly browned.
Add the rice, tomato paste, cumin, and chicken stock, then lock the lid. Once the cooker reaches pressure, cook for 8 minutes.
Turn off the heat and wait 10 minutes for the pressure to release naturally.
Open the lid and fluff the rice with a fork. Cover again and let it rest for 5 minutes.
Never force the pressure cooker open. Wait for it to cool naturally and release pressure on its own.
