Inspired by Moroccan cuisine, this stew quickly combines cumin and sweet paprika in a pressure cooker, using up leftover carrots. A little bulgur adds whole-grain texture; the dish is low-carb.

How to make it?

Sauté the vegetables

Sauté the onion and carrot in olive oil for 5 minutes.

Add the liver

Add the lamb liver and sauté for 5 more minutes.

Pressure-cook the stew

Add the tomato, bulgur, cumin, sweet paprika, water, and salt. Close the pressure cooker lid and cook for 8 minutes once it reaches pressure.

Serve

Release the pressure, then serve.

Reminder

Do not sauté the liver for too long; overcooked liver becomes tough and rubbery. Contains wheat (gluten) from bulgur.
