A distinctive pide that balances sweet and savory flavors, filled with autumn-favorite pumpkin, walnuts, and cinnamon. Boiled and mashed pumpkin is mixed with walnuts and a little sugar, then placed inside yeasted dough. It makes a comforting centerpiece for winter meals.

How to make it?

Knead and Proof the Dough

Dissolve the yeast in lukewarm water. Add it to the flour with the salt, sugar, and cooking oil, and knead. Cover and let the dough proof for 40 minutes.

Prepare the Filling

Mix the drained pumpkin puree with the chopped walnuts, cinnamon, sugar, and melted butter to make the filling.

Shape the Pide

Divide the proofed dough into 4 pieces and roll each one out thinly. Fold the edges over, then spread the pumpkin filling in the center.

Bake

Bake in a preheated oven until the dough edges are browned and the filling is lightly toasted. Note: The filling contains sugar, so use the middle oven rack to keep the bottom from burning.

Reminder

Important: After boiling the pumpkin, let it drain thoroughly in a strainer; otherwise, the filling may become watery and soak the dough. Allergen: contains gluten (wheat flour) and tree nuts (walnuts).

Ben bu kadar uzun pişirmenin gerekli olduğunu düşünmüyorum, daha kısada da oluyor. Fotoğraftaki kadar kabarmadı bende, sebebini tam çözemedim. Baharat miktarı bana ağır geldi, biraz azaltılabilir.
