Sauté the onion

A refreshing summer pilaf made by sautéing fresh purslane with tomato in olive oil, then cooking it with bulgur. Served with garlic yogurt, its slight tang and satisfying texture make it a practical main dish for hot days.
Sauté the finely chopped onion in olive oil until lightly golden. Add the grated tomato and cook for a few more minutes.
Add the rinsed bulgur and stir until it has absorbed the oil.
Add the hot water and salt. Cook over low heat until most of the water has been absorbed.
Spread the chopped purslane over the top and turn off the heat. Cover and leave the pilaf to steam for 5 minutes.
Mix the yogurt with the crushed garlic. Transfer the pilaf to a serving dish and serve warm or cold, with the yogurt on the side.
Add the purslane at the very end and cook it only briefly. If cooked for too long, it will release too much liquid and make the pilaf watery. Allergens: contains wheat (gluten) and dairy (yogurt).
