Heat the olive oil in a pot. Add the onion, zucchini and red pepper, and sauté until softened.
Add the rinsed quinoa and sauté, stirring, for 2 minutes.
Add the hot vegetable stock and salt and bring to a boil. Reduce the heat to low, cover and cook until the liquid has been absorbed.
Remove from the heat and let rest for 8–10 minutes. Fluff with a fork and serve.
Important: Rinse the quinoa thoroughly before cooking to remove its naturally bitter coating (saponin). Allergen note: This recipe contains no allergens.
