Raisin cake is a simple tea cake made by soaking raisins in lukewarm water, coating them in flour, and folding them into the batter. If added directly, raisins absorb moisture from the cake as it bakes and leave a dry ring around themselves. Soaked raisins retain moisture and help the cake bake evenly. Lemon zest is essential here: it cuts through the raisins’ one-note sweetness.

How to make it?

Drain and coat the raisins with flour

Drain the soaked raisins thoroughly in a strainer, then pat them dry with paper towels. Sprinkle two 15 ml measures of the recipe’s flour over them and stir until each raisin is coated. Wet raisins will not hold the flour and will sink to the bottom as the cake bakes.

Beat the butter and sugar

Beat the room-temperature butter and sugar for 5 minutes, until pale and fluffy.

Add the eggs

Add the eggs one at a time, beating after each addition until incorporated. Add the lemon zest at this stage as well.

Add the flour and milk

Sift in the remaining flour with the baking powder. Add the milk and mix with a spatula just until no flour is visible.

Fold in the raisins and pour into the pan

Fold the floured raisins into the batter with a spatula, lifting from the bottom. Pour the mixture into a greased and floured loaf pan and smooth the surface.

Bake

Bake in an oven preheated to 175°C / 345°F for 45 minutes. It is done when the top is golden and a toothpick inserted in the center comes out clean; do not test by inserting it into a raisin, which will always be wet. Let the cake rest in the pan for 10 minutes, then transfer to a wire rack.

Reminder

Soak the raisins in lukewarm water for 15 minutes, and let the cake cool on a wire rack for 1 hour; these times are not included in the recipe duration.
