Jordan’s winter soup is another way to enjoy jameed beyond mansaf. Jameed is made by salting sheep’s-milk yogurt and drying it in the sun until hard as a stone; it is crushed in warm water to make a yogurt drink, then added to the soup. Green lentils and cracked wheat give the soup body, while crispy onions finish the bowl. Temper the jameed liquid into the soup instead of adding it while the soup is boiling.

How to make it?

Turn the jameed into a yogurt drink

Put the softened jameed ball and its soaking water in a bowl. Crush it by hand, then whisk until smooth. The liquid should be as thick as drinkable ayran and distinctly salty. Strain it through a fine-mesh sieve to remove any undissolved pieces.

Boil the lentils and wheat

Put the rinsed lentils and cracked wheat in 2 liters of cold water and bring to a boil. Skim off the foam with a ladle, reduce the heat, and cook until both are tender; the wheat should retain a slight bite. Do not add salt yet; the jameed will add plenty.

Fry the onions until crisp

15 min

Cut the onion into paper-thin julienne strips. Fry it in the olive oil over medium heat, stirring occasionally, until deep golden brown. Lift it out with a slotted spoon and spread it on a paper towel; it will crisp as it cools. Save the fragrant oil in the pan for the soup.

Temper in the jameed

Lower the heat and stop the soup from boiling. Transfer the jameed liquid to a separate bowl. Whisk constantly as you add hot soup to it one ladle at a time; continue for three to four ladles. Pour the tempered mixture into the pot and do not bring it to a boil again—the jameed will curdle and leave grains on the surface.

Add the seasonings

Add the cumin and black pepper, then crumble the dried mint between your palms as you add it. Drizzle in two spoonfuls of the oil left from frying the onions. Taste the soup; because jameed is salty, you usually will not need more salt. If needed, add salt in 2 g increments.

Serve with crispy onions

Ladle the soup into deep bowls and top generously with the crispy onions and chopped fresh cilantro. Add the onions just before serving; they will absorb moisture and soften if they sit in the soup, and the dish will lose its only crisp element.

Reminder

Soften the jameed ball in warm water for at least 2 hours, preferably overnight, then crush it by hand until smooth. Undissolved pieces will remain as salty clumps in the soup.
