Rellenos de plátano are a hearty Cuban snack made by wrapping seasoned ground meat in dough made from ripe bananas and frying until crisp. Shaping the dough without tearing it takes practice, so it helps to test a few pieces before frying the whole batch.
Mash the boiled bananas and mix with the starch and salt until a smooth dough forms.
Heat the leftover ground meat mixture in a pan with the onion and tomato paste for 5 minutes, until thickened. If you do not have cooked ground meat, cook fresh ground meat the same way for 15 minutes.
Wet your hands, take a handful of banana dough, and place some filling in the center. Seal the dough around it and shape it into an oval. Repeat with the remaining dough.
Heat the cooking oil over medium heat. Fry the fritters, turning them, for 10 minutes, until golden on all sides.
Wet your hands when shaping the banana dough to keep it from sticking and tearing. Check the oil temperature; oil that is too hot will brown the outside quickly while leaving the inside raw. Allergen: this recipe does not contain any of the major allergen groups.
