Leblebi flour cookies are made by grinding yellow roasted chickpeas into a powder and using it in place of some of the flour. Roasted chickpeas bring a toasted flavor and a gluten-free flour to the dough. The cookies have a tender, crumbly texture. Sift the ground chickpeas after processing; larger pieces left in the flour will feel hard when you bite into the cookies.

How to make it?

Grind and sift the roasted chickpeas

Process the roasted chickpeas in a food processor or coffee grinder until as fine as possible. Sift the powder through a fine-mesh sieve. Grind any coarse pieces left in the sieve and sift again. The powder should feel smooth when rubbed between your fingers.

Beat the butter and sugar

Beat the room-temperature butter and powdered sugar for 5 minutes, until pale. Add the egg yolks and beat for 1 more minute.

Knead

Add the roasted chickpea powder, flour, and baking powder and knead by hand for 4 minutes. The dough should be slightly sticky but hold together when pressed in your palm. The chickpea powder absorbs moisture quickly, so the dough firms up as it sits; shape it right away.

Shape and arrange

Pinch off walnut-sized pieces of dough and roll them between your palms. Arrange on a parchment-lined baking sheet, spaced apart, and gently flatten the tops with your fingertip. These cookies spread very little in the oven, so shape them as you want them to look on the tray.

Bake

Bake in an oven preheated to 170°C / 340°F for 18 minutes. The cookies are done when the edges turn light brown. Roasted chickpea powder becomes bitter if overbaked, so do not extend the baking time. Let them rest on the baking sheet for 15 minutes; a cookie lifted while hot will crumble in your hand.

Reminder

Sift the roasted chickpea powder before adding it to the dough, and grind and sift any larger pieces left in the sieve again. Unsifted pieces of skin harden during baking and spoil the cookies’ tender, crumbly texture.
