Knead the dough

A staple of South African braai culture, roosterkoek is made by shaping a quick, yeast-free dough into small rounds and cooking them directly on a grill over embers. Lightly scented with charcoal on the outside and soft within, this bread is a party favorite.
Mix the flour with the baking powder and salt. Add the milk and oil and knead into a soft dough.
Cover the dough and rest for 5 minutes.
Divide into equal pieces and roll between your palms into small, flattened balls.
Place directly on the barbecue grill over a medium heat and cook for 12 minutes, turning until golden on all sides and cooked through.
Do not roll the dough too thinly, or the outside may burn before the center cooks. Very hot embers can blacken the bread quickly while leaving the inside raw; a moderate heat is ideal. Allergens: contains wheat (gluten), milk and dairy products.
