No cooking is involved; it is a twenty-minute preparation, and the salad keeps in the refrigerator for three days. Soaking the olives in fresh water first is essential—a straight-from-the-jar olive would make the salad too salty to eat.

Crack the olives and soak in fresh water

If the olives still have pits, press them with the flat side of a knife to remove the pits. Then crack each olive coarsely into 2 or 3 pieces in the same way—do not chop them with a knife; the rough surfaces hold the dressing. Put them in a wide bowl, cover with cold water, and let them soak.

Crush the walnuts

Coarsely crush the walnuts in a mortar or with a rolling pin in the bottom of a bowl. Do not grind them to a powder; the walnut pieces should be noticeable when you bite into the salad and about the same size as the olives.

Chop the herbs and garlic

Finely chop the fresh cilantro, including the stems, and cut the green onion into thin rounds. Remove the sprout from the center of the garlic and finely chop it; since this salad is not cooked, the garlic stays raw and the sprout can taste sharp.

Whisk the dressing

Whisk the pomegranate molasses, olive oil, lemon juice, and Aleppo pepper in a small bowl. Do not add salt: the olives bring salt, and you can judge how much only after tossing everything together.

Toss and let rest

Combine the drained olives, walnuts, herbs, and garlic in a wide bowl. Pour the dressing over them and fold from the bottom with a spoon. Gently fold in the pomegranate seeds last so they do not get crushed. Taste and adjust the tanginess with more pomegranate molasses if needed. Refrigerate for 30 minutes before serving.

Reminder

After cracking the olives, soak them in fresh water for 2 hours, changing the water once, then drain thoroughly. No other ingredient can balance a salad made with olives that have not been desalted.
