Prepare the dough

Sanioura, a compact Lebanese cookie, is made by kneading flour with melted butter and confectioners’ sugar, shaping the dough into small domes, pressing pistachios on top, and baking. The high butter content gives the cookies a crisp, melt-in-your-mouth texture, and their small size makes them easy to pack in a lunchbox.
Beat the melted butter with the confectioners’ sugar and salt, then add the flour and baking powder and mix to form a soft dough.
Pinch off small pieces of dough and roll them into balls. Make a shallow dent in the center with your finger and press in the pistachios.
Bake in an oven preheated to 170°C / 340°F for 20 minutes, until just lightly colored.
Once the cookies have cooled completely, sift confectioners’ sugar over them.
Do not move the cookies as soon as they come out of the oven; they crumble easily while hot. Leave them on the baking sheet until completely cool. Contains wheat (gluten), milk (butter), and tree nuts (pistachios).
