Cooking the Onion

Sataras is a simple Balkan sauté made by cooking red peppers and tomatoes until tender, then adding eggs and cooking them in the pan. Similar to menemen but with a higher proportion of peppers, it is an easy breakfast dish.
Sauté the onion in oil over medium heat for 6 minutes, until softened.
Add the pepper and sauté over medium heat for 10 minutes, until softened.
Add the tomato and cook for another 5 minutes.
Crack the eggs over the top and sprinkle with salt. Cover and cook over low heat for 4–5 minutes.
Serve hot.
