Sate ati ampela is an Indonesian street-food dish of chicken liver and gizzards marinated in a sweet-and-salty soy mixture, threaded onto skewers and grilled over embers. It is an economical, low-carbohydrate way to use offal.
Combine the liver and gizzards with the soy sauce, garlic, chili and lemon juice. Marinate for 15 minutes.
Thread the gizzard pieces onto separate skewers from the liver pieces.
Grill the gizzard skewers over the coals, turning them, for 8 minutes. Add the liver skewers and cook everything together for a further 5 minutes.
Brush the remaining marinade over the skewers and serve hot.
Put the gizzards on the grill before the liver because they take longer to cook. If you start them together, the liver may dry out while the gizzards remain undercooked. Allergen: contains soy. Check the product label for a gluten statement on the soy sauce, as ingredients can vary by product.
