A comforting English home-cooked meal of browned sausages served with buttery mashed potatoes and onion gravy. Simple and satisfying, it is a weeknight classic.
Heat the oil in a skillet over medium heat. Fry the sausages for 10–12 minutes, turning until browned on all sides. Set aside.
In the same skillet, cook the onion over medium-low heat for 15 minutes, until caramelized.
Add the flour and cook for 1 minute. Slowly pour in the meat stock and cook over medium heat, stirring constantly, for 5 minutes, until thickened.
Mash the boiled potatoes with the butter, milk, and salt until smooth.
Arrange the sausages over the mashed potatoes, spoon over the onion gravy, and serve hot.
Store in a covered container in the refrigerator for up to 2 days. When reheating, stir a little milk into the mashed potatoes to help maintain their texture.
