Pastries and dough-based dishes
These savory Turkish rolls have a soft, layered yeast dough topped with nigella seeds. They are a breakfast staple and taste best served warm.
Add the fresh yeast and sugar to the warm milk. Cover and let it stand for 10 minutes, until foamy.
Add the flour, melted butter, egg, and salt to the yeast mixture. Knead until you have a soft dough that does not stick to your hands.
Cover the dough and let it rise in a warm place until doubled in size.
Pinch off small pieces of dough and shape them into round rolls. Arrange them on a baking sheet, cover, and let them rest for 15 more minutes.
Brush the tops with egg yolk and sprinkle with nigella seeds. Bake in a preheated 190°C / 375°F oven until golden brown.
Let the dough rise in a warm, draft-free place so the rolls can puff properly. Allergen: contains wheat (gluten), milk and dairy products, and egg.
