A staple of Azerbaijan's Novruz celebrations, these cookies are made by twisting delicate, buttery dough into thin strips. They bake at a low temperature and are taken out pale golden, before their color darkens.

Break off small pieces of dough and roll into narrow strips about the thickness of a finger. Fold each strip in half and twist from the ends to form an Azerbaijani-style ring.
Bake in an oven preheated to 160°C / 320°F until pale golden on top. Do not let the cookies turn dark brown.
Do not twist the dough too tightly; looser shapes open out more evenly as they bake. If the oven is too hot, the cookies can darken in a few minutes, so watch the baking time closely for the first batch. Allergens: contains wheat (gluten), milk and dairy products, and eggs.
