A favorite at Kazakh weddings and holiday tables, shek-shek is made by frying tiny pieces of dough in hot oil, tossing them with warm honey syrup, and shaping them into a dome on a tray. Frying hundreds of small pieces one by one takes patience and time.

Wrap the dough in plastic wrap and let it rest for 15 minutes.
Roll the dough out thinly and cut it into pieces about the size of a small bean. Fry them in batches in hot cooking oil until golden.
Melt the honey and granulated sugar together over low heat and bring to a boil. Add the fried dough pieces and mix thoroughly.
With wet hands, press the mixture into a dome on a damp tray. Sprinkle sesame seeds over the top and let it cool and set for 20 minutes.
Keep the oil temperature steady while frying the dough pieces. If the oil is too hot, they will brown quickly on the outside while remaining raw inside. The dough pieces must still be hot when you add the honey syrup, or they will not stick together. Allergens: contains wheat (gluten), eggs, milk and dairy products, and sesame.
