Shish taouk is a Lebanese grilling classic made by marinating chicken breast in yogurt, garlic, and spices, then grilling it on skewers. Serve it with toum, a garlic sauce; these skewers are a main dish for a mezze spread.
Mix the yogurt, lemon juice, garlic, tomato paste, cumin, olive oil, and salt.
Coat the chicken cubes with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.
Thread the chicken pieces onto skewers.
Grill the skewers over medium-high heat, turning them, for 12–14 minutes, until browned on all sides and cooked through.
Serve hot with toum (garlic sauce) and lavash bread.
Store raw marinated chicken in the refrigerator for 1 day or in the freezer for 2 months. Store cooked chicken in the refrigerator for up to 2 days. Allergens: contains dairy (yogurt); check packaged ingredients for other allergens.
