Shopska salad is one of the best-known dishes in Balkan cuisine. It is made with chunky tomatoes, cucumber, and green bell pepper, topped with plenty of grated white cheese. Lightly salting and resting the vegetables before adding the cheese helps prevent the salad from becoming watery too soon.
Coarsely chop the tomatoes, cucumber, green bell pepper, and red onion, and place them in a bowl.
Sprinkle with salt and let them stand for 10 minutes. Drain off the excess liquid.
Drizzle with olive oil and toss gently.
Transfer to a serving plate, generously top with grated white cheese, and serve.
Grate the cheese just before serving; cheese grated ahead of time can dry out and clump. Contains milk and dairy products.
