This traditional Southeastern Anatolian dish is made by pressing cooked rice pilaf firmly into a mold and turning it out as a neat dome. For the pilaf to hold together when unmolded, the rice must be cooked to the right texture and packed firmly.

Add the tomato paste and cumin and cook for 2 more minutes. Stir in the rinsed rice and cook together for 3 minutes.
Add the hot broth and salt. Once it comes to a boil, cover and cook over low heat for 17 minutes, until all the liquid has been absorbed.
Press the cooked pilaf firmly into a greased mold. Let it rest for 5 minutes, then turn it out onto a plate.
As you fill the mold, press the pilaf down repeatedly and leave no air pockets; otherwise, the dome may collapse when you turn it out. Allergen: contains milk and dairy products.
