A classic Cretan snack, sikoti marinato is traditionally made by marinating lamb liver in vinegar and rosemary and sautéing it in hot oil. This version uses the same marinade and cooks the liver in an air fryer with less oil.

How to make it?

Clean and marinate the liver

Slice the lamb liver thinly and remove the membranes. Combine the vinegar, olive oil, dried rosemary, crushed garlic, Turkish red pepper flakes, salt, and black pepper. Pour the marinade over the slices and rub it in well.

Let it marinate

20 min

Refrigerate the liver slices with the marinade for 20 minutes; during this time, the acidity of the vinegar tenderizes the meat.

Arrange in the air fryer

Arrange the marinated liver slices in a single layer in the air fryer basket without overlapping them.

Cook

12 min

Cook in the air fryer at 200°C / 390°F for 12 minutes, turning midway through; the outside should be lightly browned while the center remains pinkish. If you do not have an air fryer, cook them for a similar amount of time in an oven preheated to 200°C / 390°F using the broiler setting.

Reminder

Do not marinate the liver for more than 20 minutes; the acidity of the vinegar can make the meat tough if left too long. Turn it midway through cooking in the air fryer, or one side may dry out.
