How to make it?

Make the syrup

Bring the sugar and water to a boil, then simmer over low heat for 12 minutes. Add the lemon juice just before removing it from the heat. Set the syrup aside. Serve it warm with the layered crepes: ice-cold syrup will not seep between them, while boiling-hot syrup will make them fall apart.

Whisk the batter

Whisk the flour, salt, egg, and water until no lumps remain. The batter should flow off a spoon after coating it, leaving a thin film behind. If it seems too thick, add 50 ml more water. Straining the batter is the surest way to remove lumps.

Cook the crepe sheets

Heat a nonstick skillet over medium heat and lightly coat it with oil. Pour in a ladleful of batter and swirl the pan to spread it into a thin sheet. Flip when the edges lift away from the pan and the top looks matte; cook the other side for 30 seconds. Make 12 to 14 sheets this way, stacking them with parchment paper between each one.

Layer and add the walnuts

Spread a crepe sheet on a serving platter and sprinkle walnuts over it. Cover it with another sheet and add more walnuts. Stack all the sheets this way, leaving the top sheet without walnuts for now. Cut the stack in half with a knife, then slice it into 12 pieces.

Soak with the syrup

Slowly pour the warm syrup over the cut lines with a ladle. After each ladleful, wait 10 seconds and watch it soak in. Stop when syrup starts pooling on top. Sprinkle the remaining walnuts over the dessert and serve.
Reminder
As you stack the crepes, add walnuts between every layer starting with the first one. The syrup only passes through the walnut layers; a dry layer will stay hard.
