These rolls are made with natural sourdough instead of instant yeast and proofed overnight in the refrigerator. Long fermentation does more than make the dough rise; it partially breaks down starches and proteins, so the rolls are easier to digest and stay fresh even the next day. Because sourdough works slowly, the dough rests in the refrigerator rather than a warm place.

Knead the dough

Dissolve the sourdough starter in warm milk. Add the oil, sugar, salt, and flour, then knead for 12 minutes. Sourdough dough is stickier than instant-yeast dough; wet your hands as you work instead of adding flour. Cover the bowl and leave it at room temperature.

Fold the dough three times

While the dough rests, fold it once every hour by lifting the edges toward the center, and repeat three times. Each fold adds air and develops the gluten without kneading. After the third fold, cover the bowl and refrigerate.

Fill and seal the rolls

Mix the cheese with finely chopped parsley. Divide the cold dough into 16 portions and press each by hand into a 10 cm circle. Place the cheese filling in the center and bring the edges together to seal. Arrange them seam-side down on a baking sheet, cover, and let proof.

Brush the tops

Brush the risen rolls with beaten egg yolk and sprinkle with nigella seeds.

Bake at high heat

25 min

Bake in an oven preheated to 200°C / 390°F for 25 minutes. Sourdough dough needs higher heat than instant-yeast dough because it gets its final boost in the oven. The rolls are done when the tops are deep golden and tapping the bottoms produces a hollow sound. Cool on a wire rack.

Reminder

After kneading, let the dough rise at room temperature for 4 hours, then overnight in the refrigerator. After filling, let it rest on the tray for another 90 minutes. These times are not included in the recipe duration; shortening them will keep the rolls from rising.

Üç tur katlama poğaçaya katmer dokusu veriyor, atlayınca sıradan yumuşak hamur oluyor. Beyaz peyniri ufalayıp süzmek de gerekiyor, sulu peynirle doldurunca hamur alttan ıslanıp çiğ kaldı.
