Once the eggs have cooled, gently tap their shells with the back of a spoon to create a web of cracks. Do not peel them.
Mix the soy sauce, water, brown sugar, cinnamon stick, and star anise. Soak the cracked eggs in this mixture for at least 20 minutes.
Remove the eggs from the sauce and cook them in an air fryer at 160°C / 320°F for 8 minutes. If you do not have an air fryer, bake them in an oven preheated to 160°C / 320°F for the same amount of time.
