Spanakorizo is a Greek olive-oil rice dish cooked several times a week in springtime homes. The spinach cooks with the rice rather than being boiled separately, releasing all its liquid into the pot; that is why the recipe uses less liquid than ordinary rice. Plenty of dill and lemon squeezed over the dish just before serving balance the richness of the olive oil.

How to make it?

Wash and chop the spinach

Wash the spinach in plenty of water three times and remove the thick stems. Do not throw them away; finely chop them and cook them with the onion if you like. Roughly chop the leaves into 3 cm pieces. Leave them in a strainer to drain off excess water.

Soften the onions

Heat the olive oil in a pot. Cook the finely chopped onion and spinach stems over low heat for 6 minutes without browning. Add the sliced green onions during the last 2 minutes. The onion does not need to brown; spanakorizo is a light green dish.

Add the spinach in batches

Add the spinach leaves to the pot in three batches, adding the next batch once the previous one wilts and shrinks. After all the spinach is in, cook uncovered to evaporate most of the liquid it releases. There should be no pool of liquid at the bottom, or it will throw off the amount needed to cook the rice.

Toast the rice

Add the rice without rinsing it and stir for 2 minutes, until the grains are coated with oil and glossy. Add the salt at this stage. Spread the rice evenly among the spinach.

Cook with the vegetable broth

15 min

Pour in the hot vegetable broth. Once it boils, lower the heat and cook with the lid partly on. The rice should be tender to the bite but not dry; spanakorizo is meant to be spoonable. If it thickens too much, loosen it with ½ of a 200 ml measure of hot water.

Finish with dill and lemon

Remove from the heat, stir in the chopped dill, and grind in the black pepper. Squeeze half the lemon directly into the pot and serve the rest in slices on the side. Let it rest, covered, for 5 minutes and serve warm.

Reminder

Add the spinach to the pot in batches. Adding all 800 g at once will fill the pot, leaving the bottom leaves to cook while the top leaves remain raw.
