This dessert reflects Andalusian cuisine’s love of spices: ripe peaches are caramelized in butter and paired with a syrup simmered with cinnamon and cloves. Getting the syrup to the right consistency takes care, and the result is a richly flavored fruit dessert served warm.

Step by Step

How to make it?

1

Prepare the peaches

10 min

Halve the peaches and remove the pits. Arrange them on a plate with the cut sides facing up.

2

Caramelize the sugar

8 min

Melt the butter in a wide skillet over medium heat. Sprinkle the sugar over it and let it melt without stirring until it turns amber.

3

Cook the peaches

12 min

Place the peaches cut-side down in the skillet. Add the cinnamon stick and cloves and cook for 6 minutes. Turn the peaches over, add the orange juice and grated lemon zest, and cook for 6 minutes more.

4

Rest and serve

10 min

Drizzle with the lemon juice and remove from the heat. Let rest for 10 minutes, then serve warm with the syrup.

Reminder

Do not stir the sugar as it melts; stirring can cause it to crystallize and make the syrup cloudy. Allergen: contains dairy (butter).

Şeftali mevsimi bitmişti, editör notundaki gibi sert armutla denedim ve pişirme süresini gerçekten 4 dakika uzattım. Sonuç güzeldi ama şeftalideki o meyvemsi keskinlik armutta yoktu.

Şekeri karıştırmadan eritmek başta beni tedirgin etti ama tarifte yazdığı gibi amber rengi gerçekten karıştırmadan geldi. Tarçın çubuğunu servisten önce çıkarmak gerekiyor mu yoksa tabakla mı sunulur?
