This spiced dried fruit compote is a French winter dessert made by simmering dried apricots, prunes, and figs in water with sugar, cinnamon, and cloves until tender. How to make it?

Soak the dried fruit

Soak the dried apricots, prunes, and figs in warm water for 20 minutes to soften them.

Make the spiced syrup

Bring the water, sugar, cinnamon, and cloves to a boil.

Add the fruit and simmer

Drain the dried fruit, add it to the boiling water, and simmer over low heat for 25 minutes, until tender.

Jar and chill

Transfer the compote and syrup to a jar and chill in the refrigerator for 2 hours.

Reminder

Soak the dried fruit before cooking; adding it straight to boiling water can leave the outside soft while the inside stays firm.
