Mix the köfte mixture

Put the ground chicken, grated and squeezed onion, soaked and squeezed bread, crushed garlic, cumin, Turkish red pepper flakes, salt, black pepper, and chopped parsley in a bowl. Mix thoroughly.

Chill and shape the patties

30 min

Refrigerate the mixture for 30 minutes. Then, with wet hands, shape it into small, flat patties.

Grill the patties

15 min

Cook the patties on an outdoor grill or grill pan until browned on both sides and cooked through. The centers should not remain pink, and their internal temperature must reach 74°C / 165°F, measured with a food thermometer. Serve hot.
