This recipe marinates leftover raw lamb liver with cumin and Turkish red pepper flakes, then cooks it in an air fryer with a small amount of oil for a lighter result than pan-frying. The short cooking time also helps keep the liver from becoming tough.

Step by Step

How to make it?

1

Cut the liver

5 min

Cut the leftover lamb liver into cubes.

2

Season

10 min

Toss the cubed liver with olive oil, cumin, Turkish red pepper flakes, salt, and black pepper, then let it rest for 10 minutes.

3

Cook in the air fryer

12 min

Arrange the pieces in a single layer in the air fryer basket and cook at 200°C / 390°F for 12 minutes, shaking the basket 1 time halfway through. If you do not have an air fryer, cook them for the same amount of time in an oven preheated to 200°C / 390°F.

4

Serve

3 min

Serve hot.

Reminder

Let the seasoned liver rest for at least 10 minutes so the spices have time to infuse. Shake the air fryer basket once halfway through cooking to keep the underside from drying out too much.
