This soup is made by blending air-fried carrots with coconut milk and hot pepper. Since it contains no dairy, it is lactose-free. It can be stored in the freezer, made ahead, and reheated as needed.

Step by Step

How to make it?

1

Roast the carrots

12 min

Arrange the sliced carrots in the air fryer basket and roast for 12 minutes, shaking the basket occasionally.

2

Cook the onion

5 min

Sauté the onion and hot pepper in olive oil for 5 minutes, until softened.

3

Blend the soup

3 min

Blend the roasted carrots, onion, hot pepper, coconut milk, and salt until smooth. Heat in a pot for 3 minutes and serve.

Reminder

Hot liquid may splatter while blending the soup, so fill the blender container only halfway. It can be stored in the freezer for up to 2 months.
