Chicken and turkey
A hearty Cuban main dish, fricasé combines bone-in chicken with chili, tomato and olives for a quick meal in the pressure cooker. With no starchy vegetables added, it remains ketogenic.
Sear the chicken legs in olive oil in the pressure cooker for 8 minutes, until browned on all sides.
Add the onion, garlic cloves and green pepper and sauté for 5 minutes, then add the tomato, olives, salt and black pepper.
Close the lid. Once it starts to boil, cook over low heat for 15 minutes, then release the steam slowly.
Important: release the steam from the pressure cooker slowly, or the meat fibers may break down and become overly soft.
