Yeasted dough is coated with oil, folded into layers, and seasoned with red pepper flakes and black pepper. This spicy version of kattama, a layered Kazakh bread, is cooked in a pan.

Cover the dough and let it rest for 20 minutes.
Roll the dough out thinly. Drizzle with cooking oil and sprinkle with red pepper flakes and black pepper. Roll it up, coil it into a spiral, and roll it out again.
Cook the dough in a large covered skillet over low heat for a total of 13 minutes, until golden on both sides.
Do not stretch the dough too much as you roll it into layers, or the layers may stick together and disappear. Contains gluten (flour).
