These rolls are filled with a spicy mixture of Turkish beef sausage, kashar cheese (Turkish semi-hard cheese), tomato and green bell pepper, wrapped in yufka pastry and baked. They make a hot, satisfying breakfast, and can be frozen before baking for easy make-ahead preparation.
Cook the thinly sliced Turkish beef sausage in a dry pan for 5 minutes, until it releases its fat. Add the tomato and green bell pepper and cook for 3 more minutes. Stir in the red pepper flakes.
Lightly brush each yufka sheet with cooking oil. Sprinkle with the grated kashar cheese and sausage filling. Roll the pastry tightly and fold the ends inward.
Arrange the rolls on a parchment-lined baking sheet and bake in an oven preheated to 200°C / 390°F for 20 minutes, until golden on top.
Pour off some of the fat released by the sausage as it cooks; too much fat can make the yufka soggy and cause it to tear. Allergens: contains wheat (gluten) and milk/dairy.
