Stracciatella means “little shreds,” named for the tiny strands of egg that form in the soup. Beaten egg, Parmesan, and a pinch of semolina are drizzled into simmering broth; when gently spread with a fork, they form delicate strands rather than curds. It is Rome’s restorative soup: the ingredients are found in nearly every home, and with good broth, little else is needed.

Strain and Heat the Broth

Strain the chicken broth through a fine-mesh sieve and heat it in a pot; clarity is half the appeal of this soup. If there are pools of fat on the surface, skim them with the corner of a paper towel. If you are making the broth yourself, make sure the thickest part of the chicken reaches 74°C / 165°F, then reserve the meat for a salad rather than adding it to the soup.

Whisk the Egg Mixture

Beat the eggs in a bowl, then add the Parmesan, semolina, nutmeg, and lemon zest and mix until smooth. The mixture should have the pourable consistency of crepe batter; if it is too thick, thin it with two spoonfuls of hot broth. If it remains too thick, it will form clumps instead of strands in the soup.

Drizzle In and Gently Separate

Bring the broth to a gentle simmer, so the surface trembles without boiling. Pour the egg mixture in a thin stream over the tines of a fork, moving the fork gently in small circles through the broth as you pour. The mixture will immediately separate into fine strands; too much stirring will break them up.

Finish and Serve

Add the salt and pepper and cook for 2 more minutes without bringing the soup to a boil. Taste it; Parmesan is salty, so only a little additional salt may be needed. Ladle into bowls and top with chopped parsley and, if desired, another pinch of Parmesan.

Reminder

Pour the egg mixture into broth that is trembling at the surface, not boiling; a vigorous boil will produce crumbled curds instead of strands.

Et suyunun kaynamaması gerekiyor, hafif titrerken döktüm ve lifler pamuk gibi dağıldı. Kaynarken dökünce topak oluyor. Parmesanı yumurtayla birlikte çırpmak da önemli, sonradan serpince tel tel dağılmıyor ve çorbanın yüzeyinde topak kalıyor.
