This strawberry cake folds fresh strawberries into a yogurt-based batter after tossing them in flour. Strawberries are especially juicy and release nearly all their liquid in the oven, so they are quartered rather than chopped small and coated with flour to protect the batter. Yogurt adds acidity, which helps preserve the strawberries’ color; without it, the berries turn brown as they bake.

Prepare and flour the strawberries

Wash the strawberries, remove the stems, and dry them thoroughly with paper towels; wet berries will not hold the flour. Quarter each one rather than chopping them small. Sprinkle 2 tablespoons of the measured flour over the berries and toss until each piece is coated.

Beat the eggs and sugar

Beat the eggs and sugar together for 5 minutes, until pale and doubled in volume.

Add the yogurt and oil

Add the yogurt, oil, and lemon zest, and mix on low speed for 1 minute.

Add the flour

Sift in the remaining flour with the baking powder and fold with a spatula just until no dry flour is visible.

Fold in the strawberries and pour into the pan

Use a spatula to fold the floured strawberries into the batter with no more than eight strokes, moving from the bottom up. Overmixing will crush the berries and turn the batter pink. Pour the batter into a greased and floured pan and smooth the top.

Bake in an oven preheated to 175°C / 345°F for 45 minutes. The cake is done when the top is golden and a toothpick inserted between two strawberries comes out clean. Let it stand in the pan for 15 minutes, then transfer to a wire rack.

Reminder

Let the cake cool on a wire rack for at least 1 hour; this time is not included in the recipe time. Strawberry cake is moist while hot and develops its proper texture and flavor as it cools.
