For a special occasion, thinly rolled beef is filled with a mixture of dried apricots, pine nuts, and parsley, rolled up, and roasted. The colorful slices make an eye-catching centerpiece for holiday and special-occasion meals.
Mix the dried apricots, pine nuts, parsley, and crushed garlic.
Lay the beef, opened out thin, on a flat surface and spread the filling over it. Roll it up tightly and tie it with kitchen twine.
Sear the roll in olive oil in a large skillet, turning it until browned on all sides.
Transfer the roll to a baking pan and roast in the preheated oven until it reaches the desired level of doneness.
Remove the roll from the oven and let it rest for a few minutes. Untie and slice it, then serve hot.
Important: Tie the roll tightly, or the filling may spill out while it cooks. Allergen: contains pine nuts (tree nuts). Let it rest for a few minutes before slicing, or the filling may fall apart.
