Pizza and Turkish flatbreads
A hearty Turkish flatbread topped with plenty of Kashar cheese and spiced sucuk. As the sausage cooks, its flavorful fat seeps into the dough, and as the cheese melts, the top turns golden. This practical dish works for dinner or a gathering.
Dissolve the yeast and sugar in the lukewarm water and let it stand for 10 minutes. Add the salt to the flour, then knead in the yeast mixture and cooking oil until you have a smooth, elastic dough.
Cover the dough with a damp cloth and let it rise in a warm place until doubled in size.
Divide the risen dough into 4 pieces. Roll each into a long, thin flatbread, then fold the edges over slightly to form a raised rim.
Arrange the sucuk slices, tomato, and pepper over the dough. Sprinkle generously with grated Kashar cheese.
Bake in a preheated oven using conventional top-and-bottom heat until the Kashar melts and the edges brown. The sucuk will release fat, so remember to line the baking sheet with parchment paper.
Important: Roll the dough with thin edges and a slightly thicker center so it does not tear under the filling. Preheat the oven at its highest setting with a pizza stone or an inverted baking sheet inside. Allergens: contains wheat (gluten) and dairy (Kashar cheese).
