Add the Beans to the Pressure Cooker

Add the rinsed azuki beans and water to a pressure cooker, then close the lid.
Bring the pressure cooker to a boil over high heat. Once it whistles, reduce the heat to low and cook for 25 minutes.
Remove the pressure cooker from the heat and wait 10 minutes for the pressure to release naturally.
Lightly mash the beans, then add the erythritol and salt. Cook over low heat for 5 more minutes, stirring, until thickened.
Do not mash the beans completely smooth; the traditional texture should retain a few pieces.
