Sumac sour is made by soaking whole sumac berries in warm water, rubbing them, straining the crimson liquid, and simmering it until it is as thick as pomegranate molasses. In the cuisines of Kilis, Antep, and Hatay, it replaces lemon in raw meatballs, salads, and sour dishes. Its flavor is milder than lemon, less sweet than pomegranate molasses, and distinctly astringent.

How to make it?

Crack the sumac

10 min

Pick through the whole sumac berries to remove stems and debris. Coarsely crush them in a mortar or pulse in a blender for 5 seconds; do not grind them to powder, just crack the berries. Transfer the cracked sumac to a large bowl and pour 2 liters warm water over it.

Rub and strain

15 min

Rub the soaking sumac with your hands for 10 minutes; the water will turn a deep crimson. Strain it through a cheesecloth-lined sieve, squeezing the cloth to extract the liquid.

Collect the second infusion

10 min

Return the pulp in the cheesecloth to the bowl, add 1 liter warm water, and let it steep. Rub and strain it the same way. Combine both infusions and discard the pulp.

Reduce

90 min

Pour the liquid into a wide pot, bring to a boil over medium heat, and continue boiling uncovered, skimming off the foam. When it has reduced to one-tenth of its volume, coats the back of a spoon in a thin layer, and a drop does not spread immediately on a plate, add the salt and remove from the heat; about 300 ml of sour reduction should remain.

Bottle

While the reduction cooks, boil the bottles and lids for 10 minutes. Using a funnel, fill the bottles with the reduction while hot, leaving 1 cm of headspace. Wipe the rims and seal.

Reminder

Cracked sumac steeps in the first warm water for 3 hours and in the second for 1 hour; these steeping times are not included in the active time. Ground sumac is often salted and oily; this recipe uses whole berries. A sealed bottle keeps for 1 year in a cool place, and an opened bottle should be refrigerated.
