This classic sütlaç is baked in small individual bowls for serving. With less sugar, it gives families a dessert option made with milk and containing calcium.
Cook the rinsed rice in a little water over low heat until the water is absorbed.
Add the milk to the cooked rice and bring to a boil. Stir in the sugar and cook, stirring, until the rice is very soft.
Whisk the rice flour into a little cold milk until smooth and lump-free. Stir into the pot until the mixture coats the back of a spoon, then divide among small oven-safe bowls.
Bake in an oven preheated to 170°C / 340°F until the tops are lightly browned in spots. Serve with a sprinkle of cinnamon, if desired.
Allergen: contains dairy. Use an oven mitt when taking the bowls out; the rice pudding stays hot for a long time. Watch closely near the end of baking, as the tops can brown quickly.
