This vegetarian Syrian dish is made by kneading red lentils and fine bulgur with an onion mixture, then shaping the mixture by hand. Made with whole grains and no meat, these patties are a practical snack that can be packed in a child’s lunchbox.

How to make it?

Cook the Lentils

Add the rinsed lentils and water to a pot and boil for 12 minutes, until tender.

Add the Bulgur

Stir the fine bulgur into the cooked lentils and remove the pot from the heat. Cover and let it stand for 5 minutes.

Prepare the Onion Mixture

Sauté the grated onion in olive oil. Add the tomato paste, cumin, and salt, then mix and knead it into the lentil-bulgur mixture.

Shape the Patties

10 min

Take portions about 3 centimeters in diameter and shape them into patties in your palm. Sprinkle chopped parsley over the top.

Reminder

Let the fine bulgur absorb the heat of the lentils; if you add it to cold lentils, it may not soften enough. Allergen: gluten (bulgur).
