Tapioca is a gluten-free Brazilian street-food breakfast. Moistened and sifted tapioca starch is spread in a dry skillet, where heat binds the granules into a translucent white crepe. There is no batter and no set water-to-flour ratio; the starch simply needs the right moisture and must be sifted. Fill it with cheese for a savory version or with coconut and sweetened condensed milk for a sweet one.

Moisten the starch

Put the tapioca starch in a wide bowl. Sprinkle the water over it, then rub it between your fingertips to distribute the moisture. Stir in the salt. The mixture should feel like damp sand: it clumps when squeezed in your palm but crumbles when touched. Cover and let it rest.

Sift the starch

Press the damp starch through a medium-mesh sieve with the back of a spoon. Break up any lumps left in the sieve with your fingers and sift them again; the starch should be fine, fluffy, and lump-free.

Cook the crepes

Heat a nonstick or cast-iron skillet over medium heat; do not add oil. For each crepe, sprinkle 4–5 tablespoons of starch evenly into the pan and level it with a spatula. Within 2 minutes, the granules will bind together and turn translucent, and the edges will release from the pan. Flip and cook for 1 more minute.

Fill and fold

Fill four crepes: two with savory ingredients and two with sweet ingredients. For the savory crepes, place the cheese and a piece of butter on one side of the crepe, fold over, and cook in the pan for 1 minute until the cheese melts. For the sweet crepes, spread on the shredded coconut and sweetened condensed milk, then fold. Serve immediately; tapioca hardens as it sits.

Reminder

After moistening the starch, let it rest in a covered container for 15 minutes before sifting; this gives the moisture time to spread between the granules so they pass through the sieve like damp sand. Unsifted starch stays lumpy in the pan and will not form a crepe. Allergen: according to the ingredient list, contains dairy. Check packaged product labels for other allergens.

Nişastayı nemlendirip elemek şart. Elemediğim ilk krepte topaklar kaldı ve tava üstünde birbirine yapışmadı, un gibi dağıldı.

Tavayı çok kızdırmayın, orta ateşte nişasta kendiliğinden birleşiyor. Yüksek ateşte alt yüz kızarmadan katılaşıyor ve krep katlanırken kırılıyor; yapışmaz tavada yağsız pişirmek de bu tarifte doğrusu.

Aynı taban her iki dolguyu da taşıyor. Tatlı yapacaksanız krebi biraz daha ince yayın, kalın olunca yoğunlaştırılmış sütle ağır kalıyor.
