Macedonia’s national dish is completely meat-free: cooked large white beans are mixed with a generous red pepper and onion sauté, then baked at high heat in a clay pot. That final thirty-minute stretch set it apart from stovetop beans: a crust forms on top, and a spoon breaks through it to reach the moist beans beneath. Use plenty of red pepper, adding it to the oil after removing the pan from the heat.

Cook the beans

Drain the soaking water. Put the beans and bay leaf in a pot with 1.5 liters of fresh water. Bring to a boil, reduce the heat, and cook without salt, skimming off any foam. The beans should crush between your fingers without resistance, but their skins should remain intact. Strain the beans, reserving the cooking liquid.

Brown the onion

Finely chop the onions. Heat the sunflower oil in a wide skillet and cook the onions over medium heat, stirring occasionally. They should become truly brown, not just golden: their volume should shrink to one-third and the edges should darken. This step builds the dish’s sweetness and color.

Add the flour and ground peppers off the heat

Remove the skillet from the heat, sprinkle in the flour, and stir for 30 seconds. Add the sweet and hot paprika and stir until the oil turns deep red. Do not return the skillet to the heat; paprika burned in hot oil will give the whole dish a smoky, burnt taste that cannot be fixed.

Combine with the beans

Add the grated tomato, salt, and black pepper to the pepper and onion mixture. Stir in a ladleful of the reserved bean liquid and simmer for 3 minutes. Pour the mixture over the drained beans and stir gently so you do not crush them. Adjust the consistency with more bean liquid; the mixture should look soupy before baking because it will absorb liquid in the oven.

Transfer to a clay pot

Pour the mixture into a wide, shallow clay pot or baking dish; do not use a deep pot. The crust forms on the surface, so a wider surface is better. Arrange the dried hot peppers and fresh mint leaves on top. Preheat the oven to 220°C / 430°F.

Bake at high heat

30 min

Bake the dish on the oven’s middle rack. The surface will bubble first, then darken and form a deep brown crust in spots. It is ready when the crust cracks under a spoon and the moist beans underneath are visible. Let it rest for 10 minutes after removing it from the oven, then serve hot.

Reminder

Soak the dried beans overnight in cold water that covers them by about three finger-widths. Do not discard the cooking liquid; it is used in the oven and its starch helps bind the dish.

Soğanı kahverengileştirme adımı yemeğin rengini de tadını da veriyor, sarartıp geçince fasulye soluk kaldı. Toprak kabınız yoksa dökme demir tencere iş görüyor. Fasulyeyi haşlarken ilk suyu döktüm, ikinci suda pişirdim ve yemek çok daha hafif oldu.

Dökme demir iyi bir alternatif. Yalnız toprak kabın gözenekli yapısı suyu yavaş buharlaştırıyor, dökme demirde fasulyenin suyunu bir parmak fazla bırakın.
