Pizza and Turkish flatbreads
Inspired by the Russian love of buckwheat, this quick, yeast-free flatbread makes a light breakfast with lor cheese and dill. Ready in fifteen minutes, it is also easy to pack in a lunchbox.
Mix the buckwheat flour, flour, lukewarm water, olive oil, baking powder and salt to make a soft dough. Roll it into a thin round with a rolling pin and transfer to a baking pan.
Spread the lor cheese and chopped dill evenly over the rolled-out dough.
Bake in an oven preheated to 220°C / 430°F until the edges are golden.
Roll the dough with a rolling pin rather than stretching it by hand. Buckwheat flour contains no gluten, so the dough tears easily when pulled. Allergens: contains wheat (gluten), milk and dairy products.
