This one-pan main dish is made by sautéing diced chicken thighs in olive oil, then cooking them with green and red bell peppers and thyme. It uses no added fat beyond the olive oil and the chicken’s own fat, making it both ketogenic and heart-friendly.
Dice the chicken thigh and coarsely chop the onion and peppers.
Heat the olive oil in a pan, add the chicken, and sauté until the outside turns white on all sides.
Add the onion and peppers and cook over low heat for 15 minutes, until the chicken releases and reabsorbs its juices.
Season with thyme, salt, and black pepper, then serve.
Do not overcrowd the pan when you first add the chicken, or it may release liquid and boil instead of browning. Add the peppers later so they stay crisp.
