Timman is an everyday classic on Iraqi tables, made by cooking rice in a pressure cooker with cumin, cinnamon, and bay leaf. Pressure cooking makes it ready much faster than the traditional method.
Rinse the rice and soak it in warm water for 60 minutes.
Sauté the onion with the cumin and cinnamon in olive oil for 5 minutes.
Add the drained rice, bay leaf, water, and salt. Cook in the pressure cooker at high pressure for 12 minutes.
After releasing the pressure, let it rest with the lid closed for 23 minutes.
Do not open the pressure cooker until the steam has been released.
