Torshi brings vivid pink mixed pickles to Cairo’s tables. Carrot, cauliflower and radish take on their color as they sit with thinly sliced beet in a vinegar brine. Cutting the vegetables finely helps the color spread evenly.
Wash the carrot, cauliflower, radish and beet, cut into suitably sized pieces and pack into a clean jar.
Bring the vinegar, water, salt and sugar to a boil in a saucepan, allowing the sugar to dissolve.
Pour the boiling brine over the vegetables in the jar. Close the lid tightly and leave to cool at room temperature.
Slice the beet very thinly. Thick slices slow the transfer of color to the other vegetables.
