Tufahije is the dessert displayed in glass bowls in Sarajevo cafés: whole apples are poached in sugar syrup, filled with walnut cream, and topped with kaymak and half a walnut. The key is keeping the apples intact; overcooked apples fall apart under a spoon, while undercooked ones stay firm in the center. The apples must cool completely after poaching and before serving.

How to make it?

Peel and core the apples

Peel the apples and remove the stems. Use an apple corer or small spoon to remove the core from the top, without piercing the bottom; you are making a well for the filling. Immediately place the peeled apples in lemon water to keep them from browning.

Make the Syrup

Combine the water, granulated sugar, lemon juice, cinnamon stick, and cloves in a wide, deep pot. Bring to a boil and cook until the sugar has completely dissolved. There should be enough syrup to cover the apples; if needed, add more water and sugar in the same proportion.

Poach the Apples

Carefully lower the apples into the syrup and place an inverted plate over them to keep them submerged. Reduce the heat and cook at a gentle simmer, with only a slight tremble on the surface. They are ready when a skewer slides in easily but the apples still hold their shape; if the skins begin to split, they have cooked too long. Remove the apples with a slotted spoon.

Reduce the Syrup

After removing the apples, boil the syrup over high heat until its volume has reduced by one-third and it has a light syrup consistency. Remove the cinnamon stick and cloves. Take it off the heat and let it cool until lukewarm.

Make the Walnut Filling

Coarsely grind the walnuts in a food processor; do not turn them into powder, as the filling should have some texture. Mix with the granulated sugar, water, and cinnamon to make a paste that clumps when pressed in your palm. If it seems dry, add 10 ml more water.

Fill and garnish

Fill the wells of the cooled apples with a generous mound of walnut paste and press it down with the back of a spoon. Place each apple in a serving bowl and drizzle two or three spoonfuls of cold syrup over it. Top with a dollop of kaymak (Turkish clotted cream) and half a walnut, then refrigerate until serving.

Reminder

Refrigerate the poached apples in the syrup for at least 4 hours, preferably overnight. Kaymak added to a warm apple will melt and the filling will fall apart.
